GOAT CHEESE ROUNDS - HOT APPETIZER
Rick's Goat Cheese Rounds
1 Log of Goat Cheese - Very Cold, Sliced 1/2" Thick
1 Cup - Progresso Plain Bread Crumbs
1/2 Cup DiGiorno Grated Parmesan Cheese
1 Large Egg, Lightly Beaten
EVOO - Enough to Fully Coat Heavy Skillet
1 Large Tomato
2 Tbsp. Balsamic Vinegar
Salt & Pepper to Taste
Dip each goat cheese round in egg, then coat with mix of breadcrumbs and Parmesan.
Place round into hot olive oil in a heavy skillet and lightly fry for 2 minutes each side until golden brown.
Place 1 or 2 tomato slices and drizzle balsamic vinegar.
Sprinkle salt and pepper over the top.
Enjoy the gooey cheese and flavors!
