ITALIAN SAUSAGE HASH
Rick's Italian Sausage Hash
1 sweet/spicy Chicken Italian Sausage, Casing Removed
1 Garnet Sweet Potato, peel & cut small chunks
2 Large Carrots, peel & cut small
1 Red Bell Pepper, Remove seeds & ribs, cut small dice
1 Medium Sweet Mayan Onion, cut small dice
3+ Tbsp. Extra Virgin Olive Oil
2 Tbsp. Unsalted Butter
1 tsp. x2 Italian Seasoning
1 tsp. x2 Coarse Sea Salt
1 tsp. x2 Fresh Ground Black Pepper
1/2 Cup Quinoa, cooked per directions
2+ Oz. Coconut Secret Soy Sauce Substitute
In large skillet, add EVOO and 1 Tbsp. butter on low to medium heat
Add Sweet Potato and Carrot to pan, sprinkle with 1 tsp. Salt & Pepper and Italian Seasoning. Cook 8-10 minutes or when potato begins to soften.
Move sweet potato and carrot to outer part of pan and place sausage in the center. Increase to medium flame, brown sausage until cooked through.
Add onion, bell pepper and 1 tsp. each of seasonings, stirring to mix. Cook 5-6 minutes.
Add cooked quinoa and 1 Tbsp. butter, mix together.
When a piece of sweet potato is easily pierced with a fork, pour in coconut secret and stir. Cook for 2 minutes on medium.
