SPICY CURRY SHRIMP SOUP
Rick's Easy & Yummy Jambalaya
Ingredients
1 pkg Ralphs Private Selection Argentinean Red Shrimp (Peeled & Deveined) cut in small chunks
2T Rogan Josh Curry Spice Paste
1C Basmati rice
1 ounce Scallions- white part only thin slices
1 can Thai Kitchen “Lite” coconut milk
Directions
Pour rice into soup pot on low heat to toast 2-3 minutes
Add IT EUOO, scallions, Rogan Josh and stir for 2 minutes
Add coconut milk and 2 ½ cans of water
Bring to a low boil for 6 minutes
Add shrimp and continue low boil for 6 more minutes
When rice is cooked, spoon it into a bowl and Enjoy!
