SPICY CURRY SHRIMP SOUP

Rick's Easy & Yummy Jambalaya


Ingredients

  • 1 pkg Ralphs Private Selection Argentinean Red Shrimp (Peeled & Deveined) cut in small chunks

  • 2T Rogan Josh Curry Spice Paste

  • 1C Basmati rice

  • 1 ounce Scallions- white part only thin slices

  • 1 can Thai Kitchen “Lite” coconut milk


Directions


  • Pour rice into soup pot on low heat to toast 2-3 minutes

  • Add IT EUOO, scallions, Rogan Josh and stir for 2 minutes

  • Add coconut milk and 2 ½ cans of water

  • Bring to a low boil for 6 minutes

  • Add shrimp and continue low boil for 6 more minutes

  • When rice is cooked, spoon it into a bowl and Enjoy!
